CHICKEN GETS EVEN!
Big Bob's been stokin' up southern style BBQ for the past twenty-five years in South Jersey mastering the delicate art of the slow smoked process. He uses strictly fruit wood which adds to the sweet flavor, but that's only a spark in the firebox. Original rub, mop, & bbq sauce is what this cowboy hangs his hat on, & why you'll know it's the real deal when you sink your teeth into a juicy, tender rack of ribs, mouth watering beef brisket, or bone lickin' chicken all glazed & caramelized to perfection.
His ½ lb., hand pressed burgers are 100% Black Angus beef seasoned with his own secret wet and dry spice that's char-grilled over open flames. His ribs are liberally doused with his own rub and then he lets 'em set allowing the seasonings to permeate throughout the meat. They're now ready for the smoker, of course during the cook, he gives 'em lots of TLC.
His pork butts are slathered with wet seasoning then rubbed with love (his dry) for a thick bark. He then wraps it tightly and refrigerates it overnight so the meat soaks up all that goodness. It's now ready to be smoked for thirteen hours, of course after he splashes it a bit more with love. His beef brisket is the tenderest and tastiest around these parts, especially after he drenches it within its own essence, but that's after he... oops almost let the bull outta the barn. His creamy Mac & Cheese consists of twelve spices and seven cheese baked to perfection!
Another compliment is his homemade baked beans consisting of black, pinto, and pink beans with thick cut Apple wood bacon that's sautéed with sweet bell peppers and onions along with herbs and spices with just enough bbq sauce to make it zing!
Did someone say wing? Cause his chicken wings are prepared fresh, never frozen, of course he douses them with love too. Whether it's buffalo, cajun, garlic parmesan, or teriyaki wasabi, they're cooked to a crisp, golden brown – best around – lockin' all the juices inside.
